What is a KOT?
A KOT is a ticket sent to the kitchen when a waiter takes an order. It tells the cooks exactly what to prepare for which table. It is not the customer’s bill: the bill is made at the end, from all the KOTs of that table.
What a KOT shows
- KOT number, date and time.
- Table number, or takeaway / delivery.
- Items and quantities.
- Special notes, such as “less spicy” or “no onion”.
- Name of the waiter who took the order.
How the KOT flow works
- 1The waiter takes the order at the table.
- 2A KOT is sent to the kitchen right away.
- 3The kitchen prepares the items on the KOT and marks them ready.
- 4If the table orders more, a new KOT is sent for the new items only.
- 5When the guests ask for the bill, all KOTs of the table are added into one bill.
Why KOT matters
- Fewer mistakes: the kitchen cooks exactly what was ordered.
- No missing items on the bill: everything that left the kitchen is billed.
- Less food waste: no dishes made twice because of a confused order.
- Faster service: orders reach the kitchen in seconds, not when the waiter walks there.
- Accountability: every order has a time and a waiter’s name.
Common KOT mistakes to avoid
- Writing KOTs by hand: they are slow and hard to read in a hurry.
- Not recording cancellations: if a dish is cancelled, update the order so the kitchen and the bill both know.
- Making the bill separately from the KOTs: this is how items get missed.
Tip: When KOT and billing are in the same system, the bill is made from the KOTs automatically, so nothing that was served is forgotten.
